Eileen Gu is actually American born and chose in 2019 to compete for China instead.

As for choosing China, it’s clearly a money play by her mom. With all the summers spent there, being fluent with huge fan support, this was an opportunity to capitalize on such a niche sport. She ranks among the top paid female athletes just behind 2 or 3 tennis players.

Yeah...Gauff, Sabalenka and Swiatek earn more $$ than Gu most likely.
I imagine Chinese tennis pro Qenwin Zheng is in the mix as well.

Yup. For a student athlete who doesn't even train year-round for her sport, with little prize money involved... yet still ranking in the top 5 for earnings, mostly from contracts and endorsements. Why wouldn't you?
Plus, the fact that the Beijing Winter Olympics were upcoming in a few years, her move to compete for a nation that was not completely foreign and a chance to become iconic for a country new to winter sports, to align with familiar people who were being demonized for something created in her own country (yes, it's true folks)... just a very shrewd move.
