Yeah, sometimes there are moose in the trees. But mainly when the apples are ripe.

Have you tried tjälaknöl?

Put a frozen moose steak in the oven at 100C over night. Then let it soak in a plastic bag with water, salt, sugar, juniper berries, thyme and bay leaves for 4-5 hours.

Serve cold in thin slices with a creamy winter chanterelle sauce, hasselback potatoes and lingonberry.

When we get a moose the old lady picks our junipers clean of the berries and does something with them to season/marinade the roasts before i rotisserie them over charcoal low and slow.
Love the hasselback taters and lingonsylt with it too but not sure about the chantrelle sauce. She makes up a bernaise sauce but that sounds interesting...will be looking into it now...
