The whole Mediterranean has great climate, good food, laidback lifestyle, but things are not going to arrive on time. The air conditioning and the escalator may work. They may also not work. Someone may be able to fix it next week. If they show up.
If you prefer things to be on time and actually work, Switzerland, Germany, Scandinavia are better options, but not as laid back, not quite as good food and far more expensive. The Czechs have the best beer and Prague looks like the setting of a movie set in the 18th century.
If you want a country that is pretty much like Canada, Sweden is one of the better options. Europe's last wilderness up north. Great hunting and fishing, bears, moose, salmon, lynx, wolves, reindeer and wolverines, real winters if you enjoy skiing, dog-sledding or pond hockey. Decent hockey league. But if you want to escape Canada, this may not be what you're looking for.
As I said, it all depends on what you're looking for.

Well by sea, of course! Cargo travel is still a thing as well as the QM2 does a bunch of runs NYC-Southampton UK. Then the Bergen Line ferries do multiple option routes from the UK to NorGAY...I'm headed to SW Sweden in the next few years so am planing this to be one of those "life's a journey, not a destination" kind of experiences
