What-cha doin for the long weekend?

The primary goal of this site is to provide mature, meaningful discussion about the Vancouver Canucks. However, we all need a break some time so this forum is basically for anything off-topic, off the wall, or to just get something off your chest! This forum is named after poster Creeper, who passed away in July of 2011 and was a long time member of the Canucks message board community.

Headin to the cabin for the weekend. Evidently the wife made a ferry reservation for 5:45 AM Saturday

I guess she doesn't realize everyone else will be leaving town TOMORROW to dodge the mayhem. Meh, it'll be a super chill weekend nonetheless.

We had some friends over for dinner the other night, she's an ovo-lacto-seafood-veggie eater so I planned a sort of wet back fish taco deal. Last minute, I get a call from my buddy, she's on a vegan diet.

Grilled salmon mixed with lemon peel, capers and yogourt.
Black bean, roasted corn and roasted red pepper salsa with smoked paprika
Salsa fresca
Guacamole
Smoked tofu, butternut squash, mushrooms with sage
Queso fresca (I can't fucking believe how easy it is to make)
Homemade corn tortillas

desert was peaches, plums, nectarines, blue berries and cherries soaked in red wine with black pepper

After hearing she had gone vegan, I added the tofu dish, but even without it, I still had the fresh tortillas and the black beans to combine for a protein source for her.

A quick blanch and ice bath of the peaches, nectarines and plums then peeled them and diced them, 1/2'd and pitted the cherries, red wine to cover and a healthy dose of ground black pepper.

The black pepper brings the dish alive, let it marinate for 24hrs. I like a bit of spice in a desert to balance the sweet richness. Acidity can have a similar effect.

I've also done fresh fruit with jalapeno pepper jelly. On other occasions I've done chocolate with habanero pepper as a creme brulee or as a pannacotta.

Is Blob Mackenzie still not back from his yearly Canada Day long weekend swingers party up at that cabin there?
