Two methods I use.

1 - In a fry pan, simmer, never boil, turn in the water a couple of times and get them 90% cooked through. Remove from the pan, drain the water, put the pan back on the heat and lower the temp. Let the water evaporate from the pan, add a skiff of oil, poke holes in the casing with the point of a knife and add the sausages back in the pan, give the pan a good shake so they don't stick and brown them.

2 - In a 375F oven, prick holes in the casings with the tip of a knife and put the sausages on a rack on a sheet pan and cook until done. Works great for bacon as well.

Hey, talk to your meat cutter and see if he'll slab you off some meat to make your own bear bacon or ask if he'll do it for you.

Nice bear, and that's less than 1/2 the size of Booths, though I have to admit to being skeptical about a 700lb black bear. Sound like a bit of a camp fire tail.

While intestine is good for sausage casing, my preferred casing is caul fat. Made crab sausage as an appy once for friends, served it with a pomegranate relish I made up.

Hunting is popular in Sweden, since we're basically still a country where most people live near a forest. The last wilderness of Europe, as the marketing people call it. There are supposedly more moose shot in Sweden than in the rest of the world combined in any given year... Looked up some stats on how many animals are shot in an average year:

100,000 moose
119,000 roe deer
19,000 fallow deer
3,000 red deer
70,000 hares
9,000 rabbits
63,000 foxes
32,000 badgers
7,000 beavers
33,000 wild boar
200 bears
90 lynx

Well, there's a lot of other animals too, lots of fowl, etc, but I just looked at mammals.

Most of our predators have been near extinction, the wolves still are, but the bear and lynx populations are now big enough to allow at least some hunting.

Hunting with bow and arrow is not legal though, nor is trapping.

Topper, Booth's bear is a monster! Anything with a 20" or greater skull is a heck of a bear. Keep in mind the world record black bear weighed almost 900lb so 700 is not a stretch. The only little gripe I had about Booth's kill is he used a crossbow. They do not take as much skill as a bow imo. Their range is a little better so you are not right in the action. He made a good shot though so that's what counts.

PS anyone who says hunting over bait is no fair for the bears should sit in a treestand 20' off the ground while a 400lb sow comes up the tree to eat you! It would blow your fucking mind how fast they get up there.

Per, are your Red Deer what we call Elk in Canada?

No. The British word for moose is elk, and in Europe we call your elks wapiti, but afaik there aren't any in Europe.
Elks (wapiti) are bigger than european deer. I guess that's why the British arriving in the Americas called them elk, since they were so big they figured they were elks (ie moose) rather than deer.

There was, now extinct, an Irish Elk, that was a huge beast, rack similarly paddled, but larger, than our moose.
