On our way home through Kelowna the other day , stopped at Godfather's Seafood Market for the best cod and chips lunch. If you are in Kelowna at lunch time, off the side of this fish monger in a strip mall on Gordon is a great little lunch counter. Before leaving, I picked up a couple of tuna steaks...

Juniper and rosemary are my favourites for lamb. Get some good Greek yogourt and hang it in cheese cloth to drain, then mix in some finely chopped fresh mint and let it sit for a couple of days in the fridge. Serve that with the lamb. Not much flavour in halibut (always get cod fish and chips) so it needs strongly flavoured side dishes.
At the restaurant we served it with a stew of squid, mixed olives, onions, garlic, tomatoes.
You could try pesto made with arugula instead of basil.
